A Whole Wheat Loaf

The first one came out misshapen and dense.  Whole wheat is Course 2.  I had it at Course 1.  This came out pretty and tasty.

I have also concluded that calcium propionate should replace 1/4 of the salt, not 1/3.  At 1/3, the flavor is not quite right.


  1. Ah, this is probably different with the calcium as opposed to the Sodium Proprionate I've been using. Be interesting to see how well that works for you.
