Every Loaf a Bit Better

After the overflowing dough monster fire, I decided to stick to the recipe when using the French bread flour.  The only changes this time were replacing 1/4 tsp. of salt with calcium propionate and adding an egg.  It was beginning to look like the incredible dough monster would be a problem again, so I punched down in the middle with a spatula as it neared the end of rising.

it looks less than cookbook, but it tastes great.  Next time, 3/4 of the quantities.
